Let's Eat! Thanksgiving Recipe Swap


It's been so long since I've had a recipe to share.  I wish I had some step by step photos, but at least I'm participating today!  Join me, as I join Daphne and the gang in sharing our favorite Thanksgiving recipes.

Today, I'm going to share my mom's Green Pea Salad recipe and my Granny's Pineapple Casserole recipe.  The Pineapple Casserole could seriously fly as dessert!  It's like pie and yummy.

Green Pea Salad (shown bottom left of photo)
1/2 head iceberg lettuce
2 small onions, sliced and rings separated
1 can tiny green peas, drained
2 TBS Sugar
5 stalks of celery, chopped
6 tsp Parmesan cheese, grated
1 pink Hellman's mayonnaise

In a 3 quart casserole, make layers of the following (in order):  lettuce, peas, celery, and onions.  Spread Hellman's mayonnaise over the top.  Sprinkle sugar and Parmesan cheese on top of the mayonnaise.  Cover and refrigerate for 24 hours.

Granny's Pineapple Casserole (shown in back of photo, but covered in tin foil)
1 cup Sugar
6 TBS AP Flour
2 cups grated sharp cheddar cheese
2 cans (20 oz.) pineapple chunks, drained (reserve 6 tablespoons of juice)
1 cup Ritz crackers, crushed into crumbs
8 TBS butter (1 stick), melted

Preheat over to 350 degrees.  In a mixing bowl, combine sugar and flour.  Gradually stir in cheese.  Add pineapple and stir well.  Pour mixture into a greased casserole dish.  Combine cracker crumbs, butter and pineapple juice and spread on top of the pineapple mixture.  Bake 25 - 30 minutes or until golden brown.

Our family can't wait to enjoy these treats and spend time with each other.  I hope you'll get to do the same.

Ohhh, I recently tasted a pineapple casserole for the first time. I was suprised I would like it, but it was soooo good. Thanks for sharing the recipe!!
